Pineapple Upside Down Cake


There was a family dinner at my home last week.  I baked a cake for after meal dessert.  I thought this pineapple upside down cake would be appropriate to serve, as Chinese New Year is around the corner.  As the cherries is Red (symbolize happiness) and the pineapple 旺来 (symbolize prosperity).  I especially love the melting golden texture on top of the cake.  This cake is light, moist, sweet and delicious.  It brings good luck too!


Pineapple Upside-down Cake
Oven: 180C, bake for 30 minutes

Ingredients:
3 tbsp light brown sugar
1 canned of pineapple rings
Some cherries
½ cup (125gm) butter, soften
¼ cup caster sugar
2 eggs
½ cup all purpose flour
2 tsp of baking powder
2 tbsp pineapple juice

Method:
1. Sprinkle the brown sugar over the base of round baking tray. Arrange pineapple rings on top. Place cherry in the centre of each pineapple ring. Set aside
2. Beat together butter and sugar until smooth and creamy
3. Beat in egg, one at a time. Stir in the pineapple juice
4. Sift the flour and baking powder and fold into the mixture
5. Pour the mixture on top of the pineapple rings
6. Bake for 30 minutes or until a toothpick inserted in the centre comes out clean
7. Leave the cake to cool in the tray for 15 minutes, then turn out onto a plate
