Melt in Mouth Nestum Cookies


I don't bake cookies for Chinese New Year because my oven is too small for it.  But I have to share this recipe with you because it is so simple to make and taste so good.  This recipe was shared by my aunt.  I paid a visit to her last week and together we made this Nestum cookies.  She uses rice bowl for ingredient measurement.  I like how baking make so easy with rice bowl.




Melt in Mouth Nestum Cookies
Oven: 180C, baking time: 20 minutes

Ingredients:
Butter 250gm
1 egg yolk
1 rice bowl of sugar (for less sweet 80% full)
2 rice bowls of self-raising flour
1 small packet of Nestum

Method:
1.beat butter and sugar until white and creamy
2. add egg yolk and beat for a while
3. add self raising flour and mix well
4. drop a spoonful of mixture on nestum, cover well with nestum
5. use the prongs of a fork to press down each ball lightly

    I would love to try to recipe for an upcoming CNY Gsthering here with some fellow Singaporeans/Malaysians so Can U please tell me how many grams it is in a Small packet of Nestum? I live in Europe & have stocked up on big packets of Nestum & have no idea how much Nestum is need for this recipe!

    Your cookies looks great.. would like to try ur recipe.. But would like to clarify with you how big is ur rice bowl that u use to measure the sugar and flour... 1 rice bowl is it measured by 1 rice cup??

  6. 1 Chinese rice bowl = 1 cup of baking measuring cup = 250ml
