Red Amaranth: From Farm to Kitchen


This was just a simple lunch we had at my mother's place.  What makes it so special was the vegetable in the soup pasta is grew by my mother.  This vegetable is called red amaranth, also called Chinese spinach or 'yin choy'.  I appreciate it so much, as it is so natural, organic and fill with so much love.
