Papaya White Fungus Soup


This is another cooking I made with papaya, earliest one was savoury. This one is a sweet and refreshing dessert.

Papaya White Fungus Soup
Ingredients:
1 ripe papaya
1 bowl of white fungus
1 handful of red dates
Chinese almonds: 1 handful of bitter almonds, and 1 handful of sweet almonds
rock sugar

Method:
1. soaked white fungus in water overnight, drained and torn into small pieces.
2. peeled and cut papaya into cubes
3. deseed red dates.
4. place all ingredients (except rock sugar) in a pot with water and bring it to a boil.
5. lower heat and simmer for an hour. Add rock sugar and stir until all disolved in soup. Serve warm.
