I will make this when I have leftover chicken (steam chicken or roasted chicken). It is a cold salad and it is nice to have it for lunch, especially during the hot weather. This was a recipe shared by my university friend when we had our pot luck lunch at her house.
Leftover Cold Chicken Salad
Ingredients:
leftover chicken
cucumber
sesame oil
pinch of salt
sesame seeds, optional
Method:
1. cut cucumber into long strips and arrange nicely on plate.
2. shredded the chicken by hand.
3. mix with sesame oil, sesame seeds and pinch of salt. Serve it cool.
