Elbow Pasta

 

What is a bowl of elbow pasta taste to you in your memory?  As for me, I remembered my mom cooks elbow pasta only when rice is not my option for food when I was sick.  I also remember it is tasteless and hard to swallow (everything is hard to swallow when you are in illness). 

I started to appreciate elbow pasta in clear soup after returning from Hong Kong trip a year ago.  In Hong Kong, people are eating elbow pasta (通粉) everyday, everywhere and at anytime, and you can find this in HK McD. Now, I cook elbow pasta soup for the kids every often.  I think this is the Chinese way of preparing pasta.  I use dried anchovies for the soup and top with fried eggs, sausage, luncheon meat, fish balls and some green vegetables.
